The Ellero and Corsaglia Valleys are the heart of the production of Raschera, one of the two mountain pasture cheeses Protected Designation of Origin of the Province of Cuneo.
The Raschera PDO is located in the traditional square shape, useful so that the cheeses produced at high altitude in summer could be transported to the valley on the back of a mule. The pristine peaks are embellished with natural karst caves, the most famous of all, that of Bossea, develops for three kilometers inside the mountain and was the first Italian cave open to the public. A destination for winter tourism for downhill skiing practicable in numerous resorts and summer tourism for the numerous and fascinating destinations and trekking routes, this territory boasts a cuisine that tells stories of beautiful and difficult mountains, tells of people who have been able to invent systems to preserve food during the winter.
